Dawn is the first quiet hour, before the house wakes. Arabica dried in the cherry and roasted light-medium, so what reaches the cup is fruit: ripe peach, a bright citrus edge, a little berry as it cools. Brew it black and give it your attention.

For a black cup in the morning: pour-over, AeroPress, a quiet first coffee.
Not for a milky coffee. Day holds up to milk far better.

How to brew Dawn
Pick your brewer: we grind for it, and here is how we would make Dawn in it. Any brewer works; the tag says where it tastes most like itself.
Works well A rounder, juicier Dawn with more body than a pour-over gives. A good way in if a press is what you own.
We send it Coarse.
French press
Coffee
20 g
Water
300 g at 93 to 96 °C
Ratio
1:15
Time
4 minutes, break the crust, press slowly
Pour it all out once pressed, so it stops brewing in the pot.
Works well Makes a lighter, brighter filter coffee than the classic, with the fruit still in it. For the strong, milky kind, Day.
We send it Fine.
South Indian filter
Coffee
20 g, about 3 level tablespoons, pressed lightly
Water
120 ml, just off the boil
Time
15 to 20 minutes to drip through
To serve
1 part decoction to 2 parts hot milk; Dawn wants less milk than most
Works well A bright, juicy shot or a lighter moka cup. Lovely black or with a splash of milk; in a big milky cup the fruit gets lost, and Day does that job better.
We send it Fine.
Moka pot
Coffee
Fill the basket level, do not tamp
Water
Pre-boiled, to just below the valve
Heat
Medium-low, lid open
Time
4 to 5 minutes, off the heat when it gurgles
Espresso
Dose
18 g in
Yield
40 g out
Time
27 to 32 seconds
Water
93 °C
Run the shot a little longer than usual. A lighter roast cut short tastes sour.
Our pick Paper and a slow pour keep the cup clean, and a clean cup is where Dawn's fruit shows. This is the roast we built for it.
We send it Fine.
Pour-over (V60)
Coffee
18 g
Water
290 g at 92 to 96 °C
Ratio
1:16
Time
2:30 to 3:00, after a 45 second bloom
AeroPress
Coffee
15 g
Water
220 g at 90 to 94 °C
Steep
1:30, then press for 30 seconds
We grind it Fine, which is a little finer than a V60 likes. Pour in short, quick pulses; if it drains slower than 3:30, use 16 g next time. The AeroPress takes Fine happily.
Works well Whole bean, for grinding just before you brew. Grind to your brewer; for Dawn we would grind medium for a V60.
Dawn is the bright one. It's 100% Arabica from Chikmagalur, natural process, roasted light-medium so the fruit stays in the cup: peach, citrus and berries.
It's made for filter brewing, such as pour-over, AeroPress or a South Indian filter. Drink it black to taste the fruit properly. Choose ground for your brewer and we grind it to suit, or take the whole bean if you have a grinder at home.

Three roasts, one for each part of the day
Dawn for the first, quiet cup. Day for the one that keeps pace. Dusk for the slow end of the evening. All three from Chikmagalur, each roasted for its hour.
Tell us how you brew and we pick it. Pour-over and AeroPress get our Fine (pour a little faster); a French press gets Coarse; if you grind at home, take Whole Bean.
Can I drink Dawn with milk?
You can, but it is built for a black cup. With milk, Day is the better choice.
How many cups is a 250 g bag?
About 13 pour-overs at 18 g each, or roughly two weeks of one cup a day.
